Watermelon Feta Chicken Salad Recipe
- 1 large pkg boneless skinless chicken breasts
- 1 5-10oz Container Mixed Greens
- 1/4 seedless watermelon, diced
- 1/2 cup Athenos brand feta cheese
- 1/2 cup toasted sliced almonds
- 1/4 cup Fresh Squeezed Lime Juice
- 1 packet True Lime Crystalized Lime
- 1/4 cup Sugar
- 1/4 cup Light Olive Oil
- 1/2 tsp Onion Salt
- 1/4 tsp fresh cracked pepper
- 1/2 Cup Lemon Juice
- 1/4 Cup Lime Juice
- 1/2 Cup Light Olive Oil
- 1 tsp Garlic Salt
- 1 tsp Pepper

Combine chicken marinade ingredients and soak thin sliced boneless skinless chicken breasts for 30 minutes, or up to 6 hours. Grill on medium heat until cooked through.

In a mason jar with a lid, or small mixing bowl combine lime vinaigrette ingredients (lime juice, true lime, sugar, oil, onion salt, pepper) and shake/whisk until well incorporated.

Place sliced almonds in a dry pan on medium heat, stirring occasionally until toasted and golden brown. Remove almonds from heat to cool.

On two large dinner plates, assemble a heaping portion of mixed greens

Slice grilled chicken and layer on top of salad greens

Add desired amounts of diced watermelon, crumbled feta, and sliced almonds

It has only a few ingredients, which makes it quick and easy to make.
But it also does not skimp on flavor or texture.
It’s a mouthwatering combination of salty, sweet, crunchy and filling this main dish summer salad recipe is a must try!
First things fist, let’s talk grilled chicken!
I’ve included a quick chicken marinade recipe above that I use for SO many chicken dishes (like these insanely good chicken fajitas).
It’s a simple tangy vinaigrette that infuses so much flavor!
Truth be told, I almost always have these grilled chicken breasts ready and in my freezer.
I buy the value sized package at the store, filet the larger breasts in half to reduce thickness, and marinade and grill them in a big batch.
I usually freeze whatever I don’t use for that recipe.

If you have not tried the lime/watermelon combination, you are really missing out.
While fresh squeezed lime juice on watermelon is SO good, I like this crystallized True Lime powder even more.

Toasting almonds is one of the easiest AND hardest jobs in making this watermelon salad!
I like to keep a large bag of sliced almonds in the freezer (to keep them fresh) and toast them in a dry pan before serving.
Medium heat toasts these babies up in no time.
Be careful not to walk away, they brown quickly and can scorch in a matter of seconds.
Don’t skip this step, they provide the best crunch to the salad and pair perfectly with the watermelon and feta.
