Eggs are a keto diet staple!  They are awesome because they pack so much nutrition and are also inexpensive! 

The only problem is that they can BORING.  If you’ve been scrambling the same ol in your pan every morning you know what I’m talking about. ๐Ÿ™‚

There are a lot of keto pancake recipes out there!  Some are thick, some are thin and then everything in between.

To be honest, I haven’t cared for most of them.

Most recipes call for almond flour and loads of eggs, which result in an overly eggy flavor for my tastes.

I think these pancakes are the exception.  I like the fluffy combination of coconut flour and cream cheese.

Chia seeds are great because they are so nutritious, while also being low carb.  These make ahead jars are a great alternative to oatmeal or porridge.
