You don’t have to worry about matching pie edges or double crusts.
This simple French dessert allows for a rustic folded edge encasing your favorite fruit filling that is served open face.
These heart shaped galettes boast a bright and tart cherry flavor that is out of this world.
Their adorable heart shape makes them perfect for Valentines Day, and nearly irresistible when served warm with a big scoop of vanilla ice cream.

Valentines Heart Cherry Galette Dessert Recipe
- 1 Cup Cubed Salted Butter
- 3 Cups Flour
- 1 tsp Salt
- 1 Tbs Sugar
- 2 large Eggs
- 1 tsp Vinegar
- 8 Tbs Cold Water
- 2 15oz Cans Tart Pitted Cherries
- 2 Cups Sugar
- 5 Tbs Cornstarch
- 2 tsp Tapioca
- pinch salt
- 1/4 tsp red food coloring
- 1/2 tsp almond extract

Cut 2 Sticks (1c) Butter into small cubes

Add Flour, salt, and sugar to butter and begin incorporating by pressing firmly with a pastry cutter or the back of a fork until cornmeal like consistency

Whisk eggs, vinegar and water together and gently combine with flour and butter mixture until crumbly dough ball is formed

gently work dough on a lightly floured surface until firmly combined

wrap with plastic wrap and chill in the fridge for up to 30+ minutes

While crust is chilling, begin assembling cherry filling by draining tart cherries, and saving the juice.

Measure juice and if needed, add water to reach 1 1/2 cups. Add sugar, cornstarch, tapioca, salt, food coloring, and extract to reserved cherry juice and whisk well.

Return drained cherries to juice mixture and let it sit in the fridge while preparing heart crusts.

Cut chilled dough ball into quarters, begin by rolling one quarter into a large rustic circle on a well floured surface until roughly 1/4' thickness.

Transfer pie crust circle to a large baking sheet covered with parchment paper, repeat for remaining crusts.

Make a 3" cut at the top of the circle to begin. Grab one edge of the cut and start gently folding/rolling crust edges into the shape of a heart.

Repeat with remaining crusts pinching and shaping as you go, to ensure the crust edge is ready to hold your cherry filling.

When pie crusts are assembled, carefully spoon cherry mixture into the inside of the heart crusts. Juice may be tempted to run, simply pinch and shape any areas where cherry filling may be trying to escape.

Spoon in just enough cherry filling to reach the top of the crust edges, but not overfill. There will be some juice remaining.

When heart crusts are assembled and ready, brush crust edges with egg wash and sprinkle with cinnamon and sugar.

Bake at 400 degrees for 20-25 minutes. Serve warm with vanilla ice cream.
Valentines Dessert Cherry Galette Recipe Run Down
This Valentines cherry galette recipe was inspired by this tart cherry galette from How Sweet Eats.
It’s well worth your time peeking at that recipe as well if you have a minute! 😉
For this recipe, you’ll begin by cubing chilled butter.
Cut into small workable cubes that can be pressed into dry ingredients.
Add flour, salt, sugar and work with a pastry cutter or fork to press butter into dry ingredients.
This takes some time, but will resemble cornmeal like consistency when well combined.
When butter and flour is well combined, make a small well in the middle of your dry crust ingredients.
Whisk eggs, vinegar and water together and pour into a well inside the butter/flour mixture.
Using a stiff spatula or spoon, gently fold wet and dry ingredients together.
Be careful not to heavily mix or over stir the dough, you’ll want it to just combine and come together without over mixing.
When dough ball is beginning to take shape, transfer to a well floured surface.
Continue to gently knead and form into a rustic ball shape
Wrap dough ball in plastic wrap and place in the fridge to chill.
Begin assembling cherry filling ingredients.
Drain your tart pitted cherries, but reserve and save the juice!
Be careful not to buy the pre made canned cherry pie filling, the flavor doesn’t even come close.
When shopping, look for for tart pitted cherries in juice.
After your cherries are drained, measure reserve liquid to ensure you have 1 1/2 cups.
If you’re a little short, simply add some tap water.
To the reserved cherry juice, whisk in sugar, cornstarch, tapioca, salt, food coloring and almond extract until well combined.
Return drained cherries to juice and gently mix.
Place cherry mixture in chilled fridge while preparing galette crusts.
Remove plastic wrap from chilled pie crust, and cut into quarters.
On a well floured surface, begin rolling out pie crust into a rustic circle shape.
Sprinkle additional flour while rolling as needed to keep rolling pin from sticking or pulling dough.
When dough is roughly 1/4″ thick, carefully transfer to a baking sheet lined with parchment paper.
Folding dough in half, and gently lifting works well to transfer without cracking.
If dough tears or cracks, simple press back together on baking sheet.
To begin assembling the heart shaped galette crust, make a roughly 3″ cut at what will be the top of your heart.
Start working at incision area by gently pressing and folding edges to resemble a heart shape.
Don’t worry, it doesn’t have to be perfect.
After you’ve worked down both edges, carefully pinch together the seam at the top of the heart.
Use extra dough and work to create an little edge that prevents cherry filling from spilling out the top of the heart.
Next, gently spoon cherry filling ingredients into your heart shaped crusts!
I try to ensure the hearts are filled with cherries, and then spoon in as much juice as the crusts will hold without overflowing.
I usually use most of the cherries, but have some reserve juice remaining.
To bring out a beautiful shiny golden crust edge brush your heart edges with whisked egg, and sprinkle with cinnamon and sugar.
Bake these little beauties at 400 degrees for 20-25 minutes, until cherry filling is set and crust is golden brown.
It’s normal for the filling to run or spill over during baking.
Don’t stress, it’s not a big deal.
Once galettes have cooled some after cooking, they can be easily transferred with a couple of cookie spatulas onto a serving plate.
Depending on the size of your sheet pans and oven, you made need to bake these galettes in batches.
To prevent crowding I placed each galette on it’s own sheet pan, and baked two at a time. 😉
