It boasts a simple fresh tomato cream sauce, and crispy breaded parmesan chicken sliced on top.
It is the perfect weeknight dinner when paired with a fresh salad and crunchy garlic bread.

Crispy Parmesan Chicken Pasta Recipe
- 4 Boneless Skinless Chicken Breasts (filleted in half, cut to 8 thin sliced breasts)
- 1 tsp Each Salt, Pepper, & Italian Seasoning
- 1 Cup Grated Parmesean Cheese
- 1 Cup Breadcrumbs
- 2 Cups Hight Heat Olive Oil
- 1 Box Dried Penne Pasta
- 1 Bunch Tomatoes On The Vine (4-6 tomatoes)
- 2 Cloves Minced Garlic
- 1 Onion
- 3 Tbs Fresh Chopped Basil
- 1/2 Cup Half and Half or Heavy Cream
- 1 tsp Garlic Salt
- 1 tsp Onion Salt
- 1 tsp Fresh Cracked Pepper
- 1 tsp Red Pepper Flakes (Optional)

Begin by prepping chicken, hand trimming chicken breasts length wise to filet into 8 thin sliced breasts. Sprinkle both sides of chicken breasts with salt, pepper, and Italian seasoning.

In a large ziplock bag, add grated parmesan cheese and breadcrumbs. Add chicken breasts, and toss in bag to evenly coat chicken in cheese/crumb mixture.

Remove chicken from bag, place remaining crumb mixture into a medium sized bowl. Whisk eggs in a similar sized bowl, and dredge chicken into egg mixture, then again into the crumb/cheese mixture for a second coating on both sides.

In a large skillet pan, heat oil to 350 degrees. Gently place the first batch of chicken into the oil and cook for 4/5 minutes/side until dark golden brown. Transfer to a baking sheet to rest, sprinkle with salt.

In a large stock pot, cook dried pasta per package directions in heavily salted boiling water. Drain, and set aside

Remove excess oil from chicken frying, reserving 1-2 Tbs and add diced onion and cook over medium heat until soft and translucent. Add minced garlic and sauté for an additional 1-2 minutes.

While onions are cooking, prep tomatoes by dicing and add them to the pan when the garlic and onions are tender and caramelized. Stir and gently scrape up browned bits off the bottom of the pan.

Cut the heat to low, add in fresh basil, and half and half and gently stir. Add in garlic salt, pepper, onion salt and red pepper flakes as desired for heat.

Toss cooked pasta with the tomato mixture until well combined. Check and adjust seasonings to taste. Serve with crispy chicken, sliced lengthwise on top of pasta.
Crispy Parmesan Chicken Pasta Recipe Run Down
When it comes to this chicken parmesan penne pasta, it’s all about the crunch!
These simple pan fried chicken breasts cook up quickly and have incredible flavor.
When combined with a simple spicy tomato cream sauce, it’s a match made in heaven.
Let’s get down to details….
You’ll begin by slicing four boneless skinless chicken breasts in half lengthwise.
Season both sides with a generous sprinkle of salt, pepper, and dried Italian seasoning.
You can also buy think sliced chicken breasts, which are more expensive but will save you a little time in slicing.
Next, everybody in the bag!
A large gallon ziplock bag works well to toss the sliced chicken with bread crumbs and parmesan cheese.
Toss and maneuver chicken to ensure it’s evenly coated on all sides.
Next up is the egg batter.
This chicken is extra yummy because of it’s double dipped crunchy coating!
It doesn’t take much more time to pull it off.
Simply remove chicken from bag, and pour remaining crumb/cheese mixture into one of the bowls.
In the other, whisk eggs together.
Preheat oil in a large skillet or frying to roughly 350 degrees (medium/high heat).
Too high of a heat can burn the breadcrumbs, leaving chicken undercooked so it is important you get the right temperature.
Work in batches if you need, and start pan frying chicken until golden brown.
Flip half way ensuring a crispy edge, roughly 4-6 minutes per side depending on the thickness of the chicken.
When chicken is cooked through and golden brown on each side, transfer to baking sheet with a paper towel along the bottom.
I like to prop the edge of the chicken up slightly on the edge of the pan to maintain the crispy edges.
While I work to prepare the pasta, I usually pop the crispy chicken into a low 175-200 degree oven to warm.
Remove excess oil from the frying pan, and reserve 1-2 tablespoons.
Over medium high heat, sauté diced onions until translucent and softened.
Season with garlic salt while cooking, add minced garlic for the last 1-2 minutes of cooking time.
While onions are cooking, slice tomatoes and prepare basil.
I love to take a shortcut from the store and use this gourmet garden chopped basil.
It has the same incredible fresh basil flavor and keeps so much longer in the fridge.
Add chopping tomatoes and basil to your pan with the onions and garlic.
Cut heat to low and gently stir to lift brown bits off the bottom of the pan.
Gently stir in cream or half and half to create a blush tomato sauce.
If you’d rather omit it, for more of a classic chicken parmesan flavor, that’s ok too!
Season with garlic and onions salts as well as red pepper flakes at this stage as well.
Red pepper flakes are optional of course, our family loves a little spice!
Cook dried penne pasta according to box directions, and gently fold into tomato cream sauce.
Remember, for ideal al dente pasta, make sure to use a large pot so your noodles have room to move about.
Also, heavily salt the water during cooking time!
When your pasta is evenly coated in sauce, it’s ready to serve!
I always sneak a noodle or two to make sure the seasonings are just right. 😉
Slice crispy chicken, and place on top of warm pasta.
Add some garlic bread and a caesar salad for an incredible weeknight dinner.
