Rainbow Cupcakes

Ingredients

  • 1 Box White Cake Mix (Funfetti Or Other)
  • 1 Cup All Purpose Flour
  • 1 Cup White Sugar
  • 3/4 tsp Salt
  • 1 1/3 C Water
  • 1 C Sour Cream
  • 2 Tbs Vegetable Oil
  • 1 tsp Almond Extract
  • 1 tsp Vanilla Extract
  • 3 whole Eggs (or 4 egg whites)

Frosting

  • 1 Cup Salted Room Temp Butter (2 Sticks)
  • 4 1/2 Cups Powdered Sugar
  • 4 Tbsp Milk or Cream
  • 1 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 6-8 drops green food coloring
  • 2 pkgs Airhead rainbow rope candy
  • 1 pkg Rollos Candies
  • Edible Gold Glitter Spray (Optional)

Instructions

  1. Preheat oven to 350 degrees and line muffin tin with paper liners (this recipe will make 24 cupcakes, so you may need to do two batches)

  2. Whisk dry ingredients together: cake mix, flour, sugar and salt

  3. Mix wet ingredients together: water, sour cream, vegetable oil, eggs & extract

  4. Blend wet and dry together for 1-2 minutes

  5. Fill paper cups 3/4 full and bake until set (12-15 minutes)

  6. While cupcakes are baking and cooling, blend frosting ingredients together until smooth

  7. portion 1 cup of white frosting aside in a small bowl

  8. Add 6-8 drops of green food coloring to the remaining batch of frosting

  9. When cupcakes are cooled pipe or spread green frosting onto cupcakes

  10. Cut airhead rainbow candies in half, and push into green frosting to secure in a rainbow shape

  11. Pipe or dot (ziplock bag works well) white frosting 'clouds' next to rainbow candies

  12. Unwrap chocolate Rollo candies, dust the bottom with edible gold glitter spray and secure in the frosting next to the rainbow rope as a pot of gold
