Melt In Your Mouth Mini Orange Cookies

Hey there!  Are you looking for a melt in your mouth soft citrus orange cookies recipe?

Great!  I’m so glad you are here.

These tiny morsels are one of our family favorites.  

Their light moist carrot cookie center is topped with an orange butter cream that is beyond delicious!

It’s a good thing they are easy to make because they usually vanish in a snap.

Ingredients
  • 1 Cup Salted Butter (2 sticks)
  • 3/4 Cup Granulated Sugar
  • 1 Cup Mashed Cooked Carrots
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 2 Cups Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 3/4 Cup Shredded Coconut
Orange Frosting
  • 1/3 Cup Butter
  • 3 Cups Powdered Sugar
  • 3 Tbs Orange Juice
  • 1 tsp Orange Zest
  • 1 tsp Vanilla Extract
Instructions
  1. In a large mixing bowl, blend butter, sugar, and cooled cooked carrots together

  2. Add Eggs One at a time until well incorporated, as well as vanilla extract

  3. Sift flour, baking powder, and salt in a small bowl. Whisk in flaked/shredded coconut

  4. Slowly mix dry ingredients with wet until a soft dough forms. Drop cookies 2" apart on lightly greased cookie sheet. A 1" cookie scoop works really well for this, or two teaspoons.

  5. Bake at 400 degrees for 8-10 minutes.

  6. Whisk frosting ingredients while cookies are baking, and promptly frost when cookies come out of the oven and are slightly warm.

This recipe beings by peeling 4-5 large carrots and steaming them until tender.

You can do this in a double boiler on the stove, or in a covered microwavable dish!  

For a short cut you could always buy cooked carrots, but I think the fresh make all the difference.

When the carrots are cooked through, you will be able to easily smash them with a potato masher or back of a fork.

This usually takes 10 minutes on the double boiler, or 5-10 minutes in the microwave. 

Add a little water in the dish as the steam helps them cook up quickly!

Let your carrots cool to room temp. 

A quick trip to the fridge will help with this while you assemble the rest of your ingredients.

I love to use my large stand mixer to make these cookies, but a large bowl and hand mixer would work really well too.

Start by creaming the butter, sugar and cooked carrots together.

Make sure your carrots are not hot so that they don’t melt the butter! Melted butter = flat cookies. 

After the butter/sugar/carrot mixture is together finish by adding one egg at a time as well as the vanilla extract.

A quick sift of your dry ingredients is all you’ll have left to add to the dough.

whisk in the shredded coconut to your flour mixture as well.  

If you like a very smooth cookie without the coconut flake, consider blending it before had!

Slowly incorporate the dry with the wet ingredients, being careful not to over mix.

Your cookie dough will be slightly wetter than chocolate chip cookie dough.

It will also want to stick to your cookie scoop, which I just let happen! 😉

For larger cookies I always grab my 2″ cookie scoop.

But for these carrot cookies, I love to use the smaller 1″ scoop.  

It’s the perfect bite size morsel and just fits their rich buttery texture and tart flavor!

These babies go onto a lightly greased cookies sheet and into a preheated 400 degree oven for 8-10 minutes.

Make sure you use quality baking pans that will not burn the bottom of the cookies!

Cheap cookie sheets are notorious for scorched cookie bottoms.

If your not sure about the ones you have, opt for the upper oven rack just to be safe. 🙂

While the cookies are baking it’s time to whisk together this quick yet decadent orange butter cream.

The orange zest really helps kick it up with incredible flavor!

When cookies are still slightly warm, I like to slather the tops with a good smear of this butter cream.

It may melt a bit and drip down the edges, which is all the better if you ask me.

Super soft, delicate, and bursting with flavor you will not be able to stay out of these!

They are so yummy.

They make a wonderful fresh summer cookie, or add diced cranberry for a yummy Christmas cookie too.
