Chicken Sausage Tortellini Pasta Recipe
- 2 12 oz Packages Chicken Sausage
- 2 Tbs Light Olive Oil
- 1 Medium Diced Onion
- 2 Cloves Minced Garlic
- 1 10 oz Container Cherry Tomatoes
- 1 12-18oz Package Tortellini Pasta
- 8 oz Fresh Spinach
- 1/2 Cup Water
- 1 tsp Garlic Salt
- 1 tsp Onion Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Red Pepper Flakes (Optional)

In a large stovetop pan or skillet, heat oil over medium heat and sear sliced chicken sausage and diced onion until caramelized.

Add minced garlic and cook for 1-2 additional minutes.

Reduce heat to low and promptly add halved cherry tomatoes, tortellini, and water as well as salts and peppers. Gently stir to combine, scraping bits off the bottom of the pan.

Cover and let simmer for 5-7 minutes.

Remove lid to add fresh spinach and gently fold into pasta. Allow spinach to wilt within warm pasta on low heat, cover for an additional 1-2 minutes.

Serve warm with french baguette or crunchy garlic bread.
Chicken Sausage Tortellini Pasta Recipe Run Down
I’m glad you made it down here, there are a couple quick tips and trick I want you to know before making this.
First, be sure to use really good smoked chicken sausage.
I know there are a million brands and flavors of chicken sausages out there.
But for this recipe, Aidells is perfect for texture and Italian seasonings.
It also has mozzarella cheese within the chicken sausage, which compliment the cheese filled tortellini pasta perfectly.
Next, simply start chopping…don’t worry this is about as hard as this chicken sausage pasta recipe gets! 😉
You will want to slice your chicken sausage into thin disks, and dice your onion.
To make this recipe, I always use my large electric skillet!
It’s large enough to easily hold big pasta recipes and heats quickly and sears to perfection.
If you’re using a stove top pan, be sure it’s a big one.
You’ll add a small amount of oil to your pan and heat over medium/high heat.
Begin searing chicken sausage and onion.
While the chicken and onions are searing, I begin prepping my fresh ingredients.
Make sure your spinach is within arms reach, and your cherry tomatoes are halved length wise.
This allows their juice to soak into the dish and flavor the pasta.
When the sausages have a good caramelized color, and the onions are tender and translucent it’s time for friends to join the party.
Add minced garlic, halved cherry tomatoes, tortellini pasta, and water.
You’ll want to gently stir the pan, cover, and let simmer over low heat for 5-7 minutes.
One note on the pasta! …
I know you can buy fresh, frozen, or dried tortellini pasta at most supermarkets.
You can make any of these types of pasta work in this recipe, with slight adjustments.
If using fresh pasta, follow directions as listed.
Dried pastas work well too, but you will need to increase the water to roughly 1 cup during covered cooking time.
If you are using frozen pasta, allow pasta to slightly thaw before using or increase cooking time for up to 10 minutes.
Where were we?…
After everyone has had a chance to hang out in the skillet pan together for a few minutes, I usually sneak a noodle to test for texture.
Sometimes I’ll add a little bit more water, often times the juicy tomatoes have done their job and nothing is needed.
Make sure seasonings are dialed in to your tastes, and adjust or add according.
Last up, the spinach.
I try to be careful not to allow the spinach to overcook.
Slightly wilted and warm, still with a little texture is perfect!
Gently fold fresh spinach into the sausage and pasta combination without overmixing.
Cover and let simmer for an additional 1-2 minutes over low heat.
Adjust seasonings to taste, and you’re ready to eat!
Keep in mind, red pepper flakes are optional.
I know not everyone likes a subtle spice to their pasta dishes.
Also, topping this pasta with fresh crumbled Feta cheese is another delicious optional ingredient.
Serve this warm and filling sausage pasta with fresh crunchy bread for the best weeknight dinner.
