Keri's Chicken Pasta Bowl

Ingredients

  • 1/4 C Extra Virgin Olive Oil
  • 2-3 Yellow Onions
  • 3 Cloves Garlic
  • 1 tsp Garlic Salt
  • 1/4 tsp Red Pepper Flakes
  • 2 lbs Cherry Tomatoes
  • 12-16 oz Fresh Spinach
  • 2-3 Sliced Grilled Chicken Breast
  • 1 Box Fettuccini Noodles
  • 3 Tbs Butter
  • 1-2 Cups Feta Cheese (For Topping)

Instructions

  1. In a large electric skillet on medium heat, sear sliced onions in Extra Virgin Olive Oil until softened.

  2. Add Minced garlic and cook an additional 1-2 minutes

  3. Turn heat to low, add halved cherry tomatoes and season with garlic salt and red pepper flakes

  4. Pile fresh spinach on top of tomatoes and cover for 4-5 minutes

  5. Fold sliced grilled chicken and fold into spinach and tomato mixture

  6. Cook pasta according to package directions in heavily salted water

  7. Fold cooked pasta into spinach mixture, add butter and additional garlic salt/red pepper to taste and let it sit for 5-10 minutes.

  8. Top with crumbled Feta Cheese when serving
